Recipe makes approximately 30 cookies.
INGREDIENTS-
– 460 gm of self raising flour
– 1 tsp of sea salt
– 4 tsp of ground ginger
– 1 tsp of cinnamon
– 1/2 tsp of ground clove or mixed spice
– 200 gm of golden syrup
– 225 gm of brown sugar
– 260 gm of butter at room temperature
– 2 tsp of baking soda
– 3/4 of a cup of raw sugar ( to coat the balls of cookie dough in)
– 350 gm of best quality white chocolate
METHOD-
1. Pre heat the oven to 180 c. Line three or four baking trays with baking paper. It’s very important to spray the trays first so that the paper stays in place and the cookies bake evenly and consistently. If the paper is blowing around in the oven then the cookies won’t be able to keep their form.
2. Sift the flour, spices and baking soda into a medium size bowl. Add the salt. Rub in the butter with your fingertips until mixture is crumbly. Add the golden syrup and mix altogether with your hands or a wooden spoon to form a soft dough. Turn the mixture out onto a bench lightly dusted with flour and gently knead briefly.
3. Roll the dough into 35 gm balls and coat in the raw sugar. Place the balls onto the baking trays, 5 cm apart from each other. Don’t press the balls down! Trust that they will flatten by themselves! Bake in the oven for approximately 15 minutes or until flattened and slightly dark brown. Allow cookies to cool for 20 minutes.
4. Place the cookies in the fridge. When we dip them in the chocolate it’s best that the cookie is cold so that the chocolate sets immediately and not runs off.
5. Melt the chopped white chocolate in the microwave very gently at 30 second intervals. Stir gently. Dip each cookie in the melted white chocolate but only coating half. Place the cookies onto a wire rack and allow to sit for 15 minutes before sticking on your little holly decoration! Store cookies in the fridge.

– Glazed green and red cherries from the supermarket
– Wilton decorating cake brand holly candy from Big W or Spotlight
– Icing made from egg white and icing sugar and then added red and green food colours
